I want to have satin finish floors. Is this how it works: the contractors sand the floor first gloss finish. They can then apply another satin finish and the look will be satin?

The bottom line: They just need to screen the last coat (it’s just a light scuff sanding of the finish, not to the bare wood) and apply a good satin finish, following the method I prescribe. And the floor will be satin. If they have no experience in applying a satin finish (have them provide references) you may still be better off doing the job yourself.
